Here’s my answer to the G&T but autumny instead of summery.
- 1 oz gin
- 3/4 oz Becherovka
- 1/2 oz cider syrup, aka boiled cider
- A couple dashes of Peychaud’s / creole bitters
- 1/2 a small bottle of tonic, 3-3.5 ounces (I’m using Fever-tree light tonic)
I like a few dashes of sour cherry bitters (Miracle Mile) in this too, when I happen to have some, but I by no means consider this part the recipe.
Boiled cider, btw, is just apple cider that has been boiled down to concentrate it into a syrup. You can make your own or buy it like I do. It’s nice to have on hand, you can make kind of an instant hot apple cider with it. It seems to last for years even unrefrigerated. It brings a tartness that fills the role of lime in a G&T.
I tried it with pear syrup (Monin) the other day. Didn’t work, pear is too delicate.

Didn’t realize you had Becherovka over in the US!
