It’s actually based on a Native American dish called Wasupdok.

Not to quibble but I think that might be native American not Native American. ;-)

I am sure it’s delicious but this seems like a challenging form factor. Are you cutting it with a knife in the soup?

It was cooking for hours, the meat just falls off the bone in to small little bits. It’s really not much different to something like coq au vin or chicken cacciatore.

I do remove the saddle after cooking though, there’s not much meat on it and all the small bones are annoying.

Mmm, chicken cacciatore. I’ll never understand how this isn’t more popular in the US. Cheap, easy, delicious.

Looks good. Nice to see hare cooked as its a bit tricky to work with. It so lean it hardly can be used for anything but stews.

You shot it yourself? Remember fly fisher would love the ears for binding as shop bought ears are usually rabbit. A friend was especially happy with white winter coat ears.

no I did’t shoot it. I live in Australia, gun ownership is quite restrictive and while I wouldn’t be opposed to going hunting there really isn’t much opportunity.

Mmmm rabbit stew. IMO the best rabbit stew, Stifado. I used to help my grandfather in Greece dispatch and butcher the rabbit, then they’d go right in the pot.

What’s a comparable meat to rabbit, as far as taste goes?

Never had it, looks good though

well this is hare, not rabbit. They’re different animals and taste quite different. Hare is darker and richer than rabbit, it’s got more umami like flavour. The closest I can describe is that it tastes a bit like a mixture of beef and kangaroo
